Cinco de Mayo Black Bean & Corn Salsa Salad
A protein-packed, no-cook dish that’s ready in under 10 minutes.
Ingredients:
1 can (15 oz) black beans, drained and rinsed
1 cup cherry tomatoes, halved
1 avocado, diced
1/2 cup chopped red onion
Juice of 1 lime
Handful of fresh cilantro, chopped
1/2 jar of Deer Park Farm Corn & Black Bean Salsa
Instructions:
In a large bowl, combine black beans, cherry tomatoes, avocado, red onion, and cilantro.
Stir in half a jar of Corn & Black Bean Salsa to coat everything in that roasted, smoky flavor.
Squeeze fresh lime juice over the top and toss gently.
Chill for 10 minutes (optional), then serve with tortilla chips or as a taco topping!

1/2 cup shredded carrots
1/2 red bell pepper, thinly sliced
Juice of 1 lime
1 tbsp olive oil
Salt to taste
1/2 jar of Deer Park Farm Mango Salsa
Instructions:
In a bowl, toss cabbage, carrots, and bell pepper together.
Add lime juice, olive oil, and a pinch of salt.
Fold in half a jar of Mango Salsa for a sweet-spicy punch.
