At Deer Park Farm, we’re always looking to bring meaningful food to our community—food with a story, a purpose, and a connection to the people who grow it. That’s why we’re proud to offer extra virgin olive oil and brined olives straight from our partners in the West Bank.
These aren’t just olives. They’re the product of centuries of tradition, grown in rocky, mineral-rich soil on ancient trees and harvested by hand at the peak of ripeness. The short growing season in this small region means the olives are picked at their prime—before they overripen—creating an oil that’s smooth, peppery, and perfectly balanced. The brined olives themselves are bold, earthy, and unforgettable. We are very gratefu for our West Bank partnership with Beit Ummar Fair Trade.

Why These Olives Matter
The best olives come from a culture that knows olives—and our partners have been doing this for generations. Their deep-rooted knowledge, paired with a rain-fed growing system and traditional methods, results in some of the finest olive oil in the world.
What makes it even better? These olives are grown through a Fair Trade cooperative in Beit Ummar. That means no commercial middlemen—just direct support for the farmers. They’re paid fairly for their labor, and we get to bring their incredible products directly to you. It’s a system rooted in mutual respect and sustainability—values we live by here at Deer Park Farm.

Deer Park Farm Summer Bruschetta
Ingredients:
1 pint cherry tomatoes, halved
1 handful fresh basil leaves, chopped
1 cup ricotta cheese
1 baguette, sliced into ½" rounds
2–3 tbsp Fair Trade olive oil (plus more for drizzling)
Salt & cracked black pepper to taste
Instructions:
Toast the bread: Lightly brush the baguette slices with olive oil and toast them in the oven at 375°F until golden, about 7–10 minutes.
Mix the topping: In a bowl, toss cherry tomatoes with basil, olive oil, salt, and pepper.
Assemble: Spread a layer of ricotta on each toasted slice, top with the tomato-basil mix, and finish with a drizzle of olive oil.
Serve immediately for a crowd-pleasing, garden-fresh appetizer!
